Un queso palmero, primer premio de su categoría del I Concurso Maestro Quesero

El viceconsejero de Sector primario, Abel Morales, y el director de Agricultura, César Martín, entregaronhoy el galardón a esta quesería, que forma parte de la DOP Queso Palmero y madura sus producciones artesanales en una cueva natural.

La Candilera madurado ahumado de leche cruda de cabra ha sido distinguido con el primer premio de su categoría en el I Concurso Nacional Maestro Quesero MQ 2019, celebrado la semana pasada en Córdoba.

El viceconsejero de Sector primario del Gobierno de Canarias, Abel Morales, y el director general de Agricultura, César Martín, entregaron hoy el galardón a esta quesería de Puntagorda, que forma parte de la Denominación de Origen Protegida Queso Palmero y que madura sus producciones, elaboradas artesanalmente a partir de leche de cabra de la raza palmera, de forma muy singular en el interior de una cueva natural.

Esta empresa, liderada por Moisés Carmona, joven ganadero que se acoge a ayudas gestionadas por el Ejecutivo canario del Programa Comunitario de Apoyo a las Producciones Agrarias de Canarias (POSEI) y para la modernización de explotaciones del Programa de Desarrollo Rural (PDR), ha sido premiada en el Concurso Oficial Agrocanarias, que organiza el Gobierno de Canarias, y el World Cheese Awards. Cuenta con una cabaña ganadera compuesta por 250 animales en producción y elabora unos 70-75 kilos de queso al día.

“Sin poner en duda la calidad de nuestros productos, este galardón ha sido una sorpresa que nos permite colocarnosen el panorama nacional, con gran trayectoria en quesos curados y semicurados, y que refleja sobre todo el cuidado que ponemos en la materia prima”, señala Carmona, que se inició en esta actividad en 2001.

Cuenta que parte del éxito de sus quesos radica en el cuidado que ponen en la alimentación del ganado, apostando por forrajes locales y millo no transgénico, y para garantizar en todo el proceso la comodidad y el bienestar animal.

El certamen, que concede un único galardón por categoría, se enmarca en el I Salón del Queso de Andalucía, que tuvo lugar en la localidad de Hinojosa del Duque, y que contó con la participación de Canarias como región invitada. El Archipiélago estuvo presente en esta cita con un stand institucional financiado por el Instituto Canario de Calidad Agroalimentaria (ICCA) y la realización de una cata comentada de quesos de cabra canarios a cargo de una técnica del Instituto Canario de Investigaciones Agrarias (ICIA), especialista en el análisis de estas producciones. También se organizó un mercado de quesos, en el que estuvo presente el Grupo Ganaderos de Fuerteventura.

Este concurso está organizado por el Instituto Andaluz de Investigación y Formación Agraria, Pesquera, Alimentaria y de la Producción Ecológica (IFAPA), organismo adscrito a la Consejería de Agricultura, Ganadería, Pesca y Desarrollo Sostenible de la Junta de Andalucía y patrocinado por la Cooperativa Ganadera del Valle de los Pedroches (COVAP) y el Ayuntamiento de Hinojosa del Duque, en Córdoba.
